Chorizo salad: 10-minute meal
For a light but protein-rich lunch, try this chorizo salad
Who says salads can’t be manly? This Spanish dish contains protein-packed chorizo, added to a healthy base of antioxidant-packed greens. Try it post-workout – siesta optional.
Ingredients
100g green beans, halved / 75g chorizo, sliced / 1 onion, sliced / 1 garlic clove, crushed / 1tbsp sherry or red wine vinegar / 5 cherry tomatoes, halved / 1tbsp olive oil / 20g watercress / Wholemeal bread, to serve
To make
Boil the green beans in a pan for three to four minutes.
In another pan, heat the oil and fry the chorizo for three to four minutes.
Add the onions and garlic to the same pan and fry for a further two minutes.
Add the vinegar and tomatoes to the pan and sizzle for 30 seconds.
Toss the chorizo mixture with the watercress and cooked green beans and serve with the bread.
